Abstract

Sturgeon is one of the most valuable fish in the word and is in fact one of the most valuable living things human beings have ever hunted. The high value of these fish has caused the endless fishing of their generations with endangered species in addition, various contaminations in the sea and rivers have been exacerbated. Although sturgeon production is aimed at dumping and restoration of natural resources in our country more than forty years old, but the sturgeon production has been started in our country for about two decades, producing meat and caviar, and along with the expanding global development This will contribute to the rebuilding of reserves, in addition to generating protein and value for the country, because of the reduction in the pressure on natural resources. The existence of a suitable climate for the rearing of these fish, low installation costs and human resources compared to European countries, the high technical knowledge and experience, as well as the reputation of our country as the producer of the best caviar in the world, has had a tremendous economic value and quickly develop. In this research, the status of development of sturgeon breeding has been attempted by the Iranian Fisheries Organization. Currently, more than 116 active farms in more than 21 provinces of the country with a production capacity of 6332 tons of meat and more than 95 tons of caviar are in operation, so that in 2017, a total of 2514 tons of meat and 3508 kg of caviar on farms produced and extracted.
